Cute, Easy, Fun Mozzarella Snowman Bites

Ingredients
- 2 lb block of mozzarella
- 1 jar of roasted red peppers, sliced into thin strips
- 1 bunch scallions, blanched
- 36 carrot slices
- 18 small black olives
- 36 medium black olives
- Carrot peeling strips as scarf
- English cucumber as base

Directions
- Cut small olives in half to make top of hat
- Cut a slice from the center of medium olives as brim
- Use a melon baller to scoop 72 mozzarella balls
- Shape as needed to make round

- Build snowman with carrot slice as base
- Add a mozzarella ball
- Top with a 2-inch strip of red pepper or scallion folded

- Skewer a mozzarella ball in the center with a toothpick
- Position over lower half & push toothpick through base
- Place medium olive slice over toothpick
- Top with small olive half with end down
- Trim scarf with scissors

- Arrange on tray & serve
